With its French influence, dining out in French Polynesia is excellent but expensive. There are several fine restaurants in Papeete and the lots of great cafes and budget eateries, notably along the waterfront. All around French Polynesia and Moorea you'll come across small restaurants where you'll get great food. Even the large resort restaurants have great dining which is rarity amongst the other South Pacific destinations.
Nightlife too is good, but restricted to Papeete and a few spots around west French Polynesia and the north coast of Moorea. On all the outer islands, nightlife is limited to resort entertainment which includes traditional dance shows and feast nights - these are not to be missed and French Polynesian dancing is amongst the best in the South Pacific.
